Pumpkin Doughnuts

Baked Pumpkin Doughnuts

Ingredients:


  • 2 cups all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • One 15-ounce can pumpkin puree
  • 1 1/2 cups sugar
  • 1/3 cup vegetable oil
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3 large eggs

Topping:

  • 3/4 cup sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons unsalted butter, melted



Directions:

  • For the doughnuts: Preheat the oven to 350 degrees F.
  • Whisk the flour, pumpkin pie spice, baking powder and salt together in a medium bowl.
  • Beat the pumpkin puree, sugar, vegetable oil, butter, vanilla and eggs and together in another large bowl until smooth.
  • Add the flour mixture to the pumpkin mixture and beat until just combined.
  • Fill three 6-cup nonstick doughnut pans with the batter so that each mold is almost full. Smooth the tops with a moistened finger.
  • Bake the doughnuts until a wooden pick inserted into the center comes out clean, about 15 minutes. Invert the doughnuts onto a cooling rack.
  • For the topping: Stir the sugar and cinnamon together in a shallow bowl. Working one at a time, brush the doughnuts all over with butter, then dip them in the cinnamon sugar to coat. Serve warm or at room temperature.

PANCAKES from scratch

Ingredients:

  • 1 cup + 2 tbsp all purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp canola oil

Directions:

  1. Combine flour, sugar, baking powder, baking soda and salt in a medium mixing bowl.
  2. In a 1 pint glass measuring cup, measure milk, eggs and oil, beat together with a fork.
  3. Pour milk mixture into flour mixture and beat until smooth. Do not over mix. Pour batter back into the pint glass measuring cup. Use a rubber scraper to get all the batter out.
  4. Preheat a large non-stick skillet or griddle to medium temperature, for 3-5 minutes. Light grease with a non-stick spray, once only.
  5. Using the measuring cup pour batter onto the griddle. Make 3 small pancakes at a time, 3-4 in dia. Use a plastic turner to turn pancakes 1 time only, when bubbles have formed and edge of pancake is not shinny. Pancakes should also be a little risen. Only flip pancake once. DO NOT press pancake with turner. Second side should cook in less than a minute. Remove pancakes to a large plate and keep warm. Adjust heat to lower or increase cooking temperature.
  6. Serve with butter and syrup.

LOCO MOCO

Beef Patti:

  • 1 lb ground beef
  • 1/4 cup bread crumbs
  • salt to taste
  • dash of pepper
  • 1/4 round onion, minced or 1 tbsp dried onion
  • 1 egg to bind ingredients together
  • 1 tbsp Worcestershire sauce
  • 1/4 cup evaporated milk

  • 1. Combine all ingredients together in a bowl.
  • 2. Form into round balls.
  • 3.Shape into flat patties, 4-6 inches. Use waxed paper to shape and transfer patties to the broiling pan.
  • 4. Adjust rack in oven so that the broiler pan is about 4 inches from the broiler.
  • 5. Broil hamburgers about 5-7 minutes on first side or until they are brown and sizzing, turn them over to cook other side, for another 5 minutes. 

Preparation of eggs:

  1. Prepare eggs sunny-side up, over easy or scrambled.
  2. Use a skillet over medium heat with a little vegetable oil.

Assembly of Loco Moco:

  1. Assembly from bottom to top in this order.
a. rice
b. beef pattie
c. egg
d. gravy

ALFREDO SAUCE

Alfredo Sauce

Ingredients:
  • 1/4 cup butter
  • 1 cup half and half cream
  • 1 cup whole milk
  • 1 tsp kosher salt 
  • 1 clove garlic, smashed and minced
  • 1/3 cup grated parmesan cheese
  • 1/2 tsp freshly ground pepper(optional)

Pasta
  • Bring a large pot of water to a boil. Add the pasta and cook until it is tender but still firm to the bite.
  • Drain noodles and place back into large pot. Drizzle 1-2 tbsp of olive oil and season with 1/2 tsp salt. Gently mix together. Transfer pasta to large serving dish.
Sauce
  • Combine butter, cream, milk, salt and garlic in deep pan. Bring to a boil.
  • Reduce heat. Add 2 tbsp of thickening agent( flour/milk mixture) to cream mixture. Stir till thickening occurs. If the thicker sauce is desired mix in 1 more tbsp thickening agent. Add noodles to the sauce, and toss to coat. At this time, add the parmesan cheese and continue to stir gently to incorporate cheese into the sauce.
  • Season to taste. Place selected type of meat on top of the noodles and serve.

Carrot Cup Cakes

Carrot Cup Cakes

Ingredients:
1 Cup white sugar,
1/2 Cup vegetable oil,
2 Eggs,
3 Medium carrots, finely grated,
1 Teaspoon vanilla extract,
1 Cup all-purpose flour,
1/4 Teaspoon salt,
3/4 Teaspoon baking soda,
1 Teaspoon ground cinnamon,
1 Teaspoon ground nutmeg,
1/8 Teaspoon ground cloves

Direction:
1. Preheat oven to 350F. Line muffin tin with paper liners.
2. In a large bowl, combine sugar and oil; beat well. Add eggs, grated carrots, and vanilla extract; beat mixture until smooth.
3. Combine flour, salt, baking soda and spices; in another bowl and add to creamed mixture, beating well. Spoon batter into prepared muffin tin cups.
4. Bake for 30 minutes, or until cake test done.

APPLE CINNAMON CAKE

Hello, everyone. This week I am going share my APPLE CINNAMON CAKE recipe. We need some sweet to throughout the week, let us bake some cakes :)))


Ingredients:

  • 1 Cup + 2 T. Flour
  • 1/2 Cup Brown Sugar, Packed
  • 1/4 Cup + 2 T. Granulated Sugar
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Cinnamon
  • 1/4 Tsp. Nutmeg
  • 1/4 Cup. +2 T. Salad Oil
  • 1/2 Tsp. Baking Soda
  • 1/2 Tsp. Baking Power
  • 1 Egg
  • 1/2 Cup Milk
  • 1 Apple, peeled and minced
First, preheat oven to 350 degree.

2. In a mixing bowl, combine flour, sugar, salt, cinnamon, nutmeg and oil. Mix with pastry cutter until crumbly.

3. Remove 1/3 cup of mixture and reserve.

4. Adding baking soda, baking power, egg, milk, to mixture in mixing bowl. Beat until smooth with a fork.

5. Line muffin tin with cupcake paper liners. Place approximately 1 Tbsp, batter in each cup.

6. On top of batter, place 1 Tbsp, minced apple, followed by the rest of batter. Use all the remaining batter equally on each muffin.

7. On every top of each muffin cake, sprinkle about 1 Tsp of crumb topping.

 8. Bake for 25-30 minutes. Check with toothpick for doneness.

OATMEAL COOKIES

Aloha, everyone,
Today I am going to share my recipe to baking OATMEAL COOKIES, I love oatmeal cookies, and hope this recipe can help you.
The ingredients includes:
  • 1 cup butter/ margarine
  • 4 cup brown sugar,
  • 3/4 cup granulated sugar,
  • 1 tsp. vanilla,
  • 1 egg,
  • 1 3/4 cups flour,
  • 1 tsp. cinnamon,
  • 1/2 tsp. baking soda,
  • 1 1/2 cup oatmeal (quick one)
FIRST,
Cream together margarine, brown sugar, granulated sugar, vanilla and egg with fork or wooden spoon.
SECOND,
Combine all other dry ingredients in the separate bowl, making sure that all ingredients are mixed well. Add flour mixture to creamed mixture and mix with wooden spoon.
NEXT,
Using two spoons or a #30 scoop form cookie dough into even portions on an ungreased cookies sheet. Cookies may be pressed with the palm of your hand to flatten slightly.
LAST,
Bake in a preheated oven for 15 minutes at 350 degrees.
Yield about 24 cookies.
