PANCAKES from scratch
Ingredients:
- 1 cup + 2 tbsp all purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup milk
- 1 egg
- 2 tbsp canola oil
Directions:
- Combine flour, sugar, baking powder, baking soda and salt in a medium mixing bowl.
- In a 1 pint glass measuring cup, measure milk, eggs and oil, beat together with a fork.
- Pour milk mixture into flour mixture and beat until smooth. Do not over mix. Pour batter back into the pint glass measuring cup. Use a rubber scraper to get all the batter out.
- Preheat a large non-stick skillet or griddle to medium temperature, for 3-5 minutes. Light grease with a non-stick spray, once only.
- Using the measuring cup pour batter onto the griddle. Make 3 small pancakes at a time, 3-4 in dia. Use a plastic turner to turn pancakes 1 time only, when bubbles have formed and edge of pancake is not shinny. Pancakes should also be a little risen. Only flip pancake once. DO NOT press pancake with turner. Second side should cook in less than a minute. Remove pancakes to a large plate and keep warm. Adjust heat to lower or increase cooking temperature.
- Serve with butter and syrup.

I didn't know that we should not do over mix. I was always mixing well when I cook the pancakes. Lol Thank you for sharing it, it was helpful to me.
ReplyDeleteI have to try this! I always use the quick pancake mix because it is so convenient but I want to try a home made pancake mix from scratch. Sounds delicious!
